There are times in life when you don’t want to be in knots. Be it your thought processes or otherwise. However when it comes to food, many beautiful things come in knots, like these Garlic knots. Life is best described when you bite into a warm, flavorsome, addictive garlic knots. You will never want to be out of these knots.
I don’t know when I was introduced to these, I guess the shaped buns have been for ever. The buns shaped as these are always served complimentary at buffets along with butter and they taste yum! I got to know about the garlic knots only after blogging. So its been that many years since I have been wanting to bake these myself.
Infact when we have a theme on complimentary food served by restaurant, this was supposed to be one of the dishes that I planned to showcase. We do have some restaurant offering these warm buns on the house and more than the other starters, these buns will be much on demand.
Even though one can use the regular pizza dough for making this, I was planning to trying out my fellow BM’s recipe, so took this opportunity to check out all the posts that have been shared till date. I settled on Priya Srinivasan’s
and went about making it.
This was also one of those fast moving dishes. If you noticed I clicked it from the plate I had baked, I could see that the kids were restless and if I had to do a setup, I might end up clicking a past story for you guys. I might have ended up saying, this plate you see, had some garlic knots that were so delicious that none could wait for the clicks to happen. Will share a picture when I bake it again, however I am not sure I might be able to capture it even then! Yea I can just imagine that line being written if I was not quick on my feet. I can hardly be quick on my feet, mentally I was goading myself.
Also there is this question of being mentally drained and out of ideas. At the critically moment, I was unable to imagine any specific plating other than Priya’s picture coming to mind. So you see, looks like I tried to mimic her style here. I think her situation would have been the same as well, with two little ones around!
Garlic knots are made using parsley, it can be replaced with coriander. Though we do get parsley in our markets these days, these are always overpriced and I end up letting it sit for longer time than what I can make. So I don’t go about planning to buy that most times.
Warm buns with the garlic coriander butter tastes awesome and you can’t stop with just few! So for the third day, under Savory bakes, I have finger food with twisted looks for the last two days of the Mega BM.
All purpose flour – 1 & 3/4 Cup
Warm water 3/4 cup
Instant yeast 2 tsp
Salt – 1 tsp
Sugar – 1 tsp
Olive oil – 1 tbsp
Garlic butter for brushing the knots
Butter, unsalted – 5 tbsp
Garlic – 6 -7 cloves
Coriander, finely chopped – 1 /4 cup
Salt – 1 tsp
How to make the Garlic knots.
Take the flour, yeast, salt and sugar together in a mixing bowl. Mix well, then slowly add warm water and start kneading to a dough. Add oil at the end and knead for around 2-3 minutes. Transfer to the counter and knead for 10 mins or till the dough is very soft and smooth.
Cover with clip warp and let it rest in a well oiled bowl until it doubles well in volume for around 60 – 90 minutes.
Once doubled, remove the dough onto a well-floured surface. Punch it down to remove the excess air. Divide the dough into 3 equal parts. Work with one part of the dough, while keeping the rest covered in a bowl.
Line a baking tray with parchment paper. Roll the dough into a square of 6 inches and cut them into 1 inch strips each.
Take one strip, roll it into a rope of 7-8 inches long. Using your fingers, make a circle, insert one end inside to make a knot and close. Continue with all the rest. Place each on a parchment laid baking tray.
Let the knots rest for an hour or until doubled in size. While the knots are resting, prepare the Garlic-butter.
I used the garlic presser, which gets best results. Heat a non stick pan with butter, crush the garlic directly into it, add finely chopped coriander. Saute well for the spices to get mixed well. Switch off, and let it rest.
Preheat the oven to 220 C. Bake the knots for 13 minutes. Take it out of the oven, brush generously with garlic-butter and bake again for 5 minutes or until well browned on top.
Take it out of the oven, let it cool completely on a wire rack.
Serve it right away!
