This week is going to be cookies and the second day will be all about chocolate cookies. I knew I can’t be far away from not trying some chocolate cookies. The house smelled heavenly when this was getting baked and kids were just at my foot the entire time I was baking it. There is nothing like the aroma of melted chocolate that pulls them into the kitchen.
I adapted this recipe from here. The cookies had a frosting that’s called kossuth frosting. I was wondering what kossuth was about and read about it. Once the cookies were done and the frosting was drizzled, kids wanted to try their hands, especially decide their own toppings. They finalized on three different ones, each one for one.
And they wanted me to click pictures with all three. So that’s why you see the picture below. This was one of those really super hit cookies at home and kids really enjoyed with the double treat of chocolate you find in this cookies.
Chocolate Cloud Cookies
All purpose flour – 1 & 1/2 cup
Baking Soda – 1/2 tsp
Baking Powder – 1 tsp
Brown Sugar – 1 cup
Butter – 1/2 cup
Milk – 1/2 cup
Egg Replacer – 1 tbsp mixed with 3 tbsp water
Vanilla extract few drops
Chocolate Chunks, melted – 3/4 cup
Kossuth Cake Chocolate Frosting
How to make the Cookies
Pre heat the oven at 180 C.
Line a baking paper over a baking tray.
Cream the butter till light and fluffy, add sugar and continue creaming.
Mix the egg replacer in a bowl and keep it ready.
Nuke the chocolate chunks and melt and temper it well. Keep it aside.
Sieve the flour with baking soda and baking powder.
Now add the melted chocolate to the butter and mix well. Then add the flour and combine everything till nicely incorporated. Slowly add the milk till you get a good dough.
Using either a teaspoons / or a scooper, scoop out the dough onto the baking sheet, leaving at least 1 inch between cookies. Bake for 8 to 10 minutes, until the cookies spring back when touched. Make the frosting while the cookies bake. Remove the cookies from the oven and cool for 1 minute.
Once it cools down, remove the cookies and place on the wire rack for the frosting. ensure you place this on a tray so that the dripping need not fall on the counter.
While the cookies are still warm, drizzle a teaspoon of the chocolate frosting on each and use the back of a spoon to spread the icing around.
Kossuth Cake Chocolate Frosting:
Bittersweet chocolate – 1 cup
Butter – 1/4 cup
Sugar – 1 cup
Egg Replacer -1 tbsp mixed with 3 tbsp
How to make the Frosting
Place the chocolate and butter in a MW bowl and MW for a minute. Remove and temper well, Add the egg replacer and sugar and mix everything well till blended well.
If the frosting becomes thick, add hot water and mix well.
Drizzle over the cookies when still warm. and allow to cool.
Sprinkle sparklers over it and store.
