We are starting the Blogging Marathon Edition #13 today. I selected to do “Easy Lunch Recipes for Kids” featuring Rice. Of course, you must wonder, being a South Indian eating rice must come naturally right. Well for starters, I am not a great rice eater myself. Given a choice to select rotis or rice, I will surely prefer rotis. So it’s no wonder when Konda expresses the same. Though the thought makes me feel good, I still feel living in this place one needs a daily quote of rice.

Having said that, I always looked for ideas on how to get her eat the rice. She hardly ever eats on regular basis. So there is always a struggle to find simple dishes that suits her taste, yet easy to make. I was sure that the best bet to do it was to send it to school as she can’t get back an untouched box.

During my recent visit to my SIL, I was asking her what she packs for my nephew and niece. Both being a year older and younger to Konda, I was most interested to know their eating habits. Of course, I knew already that they aren’t so fussy about food as mine was. It was a most interesting conversation and I was right then with a pen and paper jotting down the ideas that were pouring. My SIL was most amused that I should resort to pen and paper myself. Somehow the thought that I can also be short of ideas was beyond her apprehension. Little does she know that the truth is far from it.

Anyway she said her kids eat the rice she ruffles up and mostly that’s also what she packs for themselves. I can’t be so adventurous to assume that hubby dear will like to eat this rice. But then my object of interest was Konda and I don’t mind that extra work preparing this rice might be in the hectic early hours.

All these recipes are very simple, not spicy but not bland either. My schedule starts about 6.30 am in the morning. I soak the rice for 10 mins, pressure cookย the rice right away. The actual preparation of this rice takes about just 15 mins. This edition I have selected two kid related themes just to make sure the Kid’s Delight gets good participation and I also end up getting ideas for my Kid’s lunch box.

This dish can very well be made with leftover rice for yourself, of course with more spice added.


Step by Step Picture Recipe:







Capsicum Rice

Ingredients Needed:

1 cup Cooked Rice
1/4 cup Onions
1/2 cup Capsicum
1 medium Green Chili
1/2 tsp Cumin Seeds / Jeera
1/4 tsp Ginger Garlic Paste
Pepper powder as per taste
Salt to taste
1/4 tsp Soya Sauce

How to make Capsicum Rice

Soak the rice for 10 – 15 mins, pressure cook for 3 whistles or till done (as per your cooker instructions)

Heat a nonstick pan with oil. Add cumin seeds, when they splutter, add onions, green chilies and saute well. Then add capsicum julienne and simmer.

Add ginger garlic paste, saute well. Then add the cooked rice and combine everything well. Add pepper, salt and check the taste.

Finally, add few drops of soy sauce and cover with lid.

Notes:

I wasn’t planning on adding that soy sauce, it was the last moment inclusion. So only a few drops were added. The taste should not be predominately soya sauce.

Make sure the capsicum is well cooked by cooking it with lid.

I also packed this for my Dad so it’s good for adults also..:)

  1. Same here Valli. I have never packed till date a rice dish for my 10 year old daughter's lunch box. And so, I usually don't post for "lunch box for kids" themed events. ๐Ÿ™‚ However I have taken it for this BM and have to see how it goes.
    This version of capsicum rice seems simple and works for adults too with some spices, I guess.

  2. I too opted this theme for fun!!..yes kids dont like capsicum,but chop it fine and use colors they will get carried away..the whole idea is to feed them with some rice and nutrtion…n ya Valli these wud taste awsum.

  3. Easy breezy dish.But my lil one does not like capsicum but she loves to have rice dishes in her lunch box. Looking forward to other recipes in this series ๐Ÿ™‚
