Mini Nankhatai Recipe

Mini Nankhatai makes a wonderful edible gift. I always make some cakes, brownies or cookies when I visit my SILs. My nephew and nieces enjoy my baked dishes and look forward to them. Every year during the Sankranthi holidays, we make a trip to my Hubby dear’s hometown and it was same this year as well.

I was planning on making some Tea Cakes, then decided that I might as well bake something for the Kids Delight themed on Mini Baked Dishes. I was really clueless on what to bake. Then decided I will bake these Nankhatais as I was wanting to bake a long time now. I already have a couple of versions of Nankhatais and you may ask why another one. Well, even a slight difference seem to make a load of difference and I so loved these when my SIL got for us.

She baked this for us when they visited last year. I pinged her for the recipe and she shared it with me. In fact, I said why I couldn’t find it on her blog. She has two recipes written down and wasn’t very sure which ones she used. However, I remember those were so melt in the mouth kids. I had practically finished the whole box.

Instructions
  1. Pulse the Rava and sugar couple of times to get a finer powder.
  2. In a wide bowl, take the flour, add besan, the powdered mix and slowly add the melted ghee.
  3. Mix it together to bind the flours and keep adding till you get a firm balls.
  4. You should take care to mix quickly as ghee will solidify fast.
  5. Pinch out small tiny balls, flatten on a lined baking tray.
  6. Preheat the oven at 185 C and bake for 10 to 12 mins.
  7. Allow cooling on a rack before storing in an airtight box.
Recipe Notes

The recipe calls for Cardamon as well, which I seem to miss out every time. You can add a pinch of salt as well.
