After the day one of Low Carb Dish, I was all geared up for my second day dish. Infact I planned so that I could get my day three done as well. As expected things don’t work as we plan. so I was left with making just one dish and then I had to take care of the dinner for the rest. I had even told Amma that I was making a low carb dinner for the two of us and rest would have something else.
As things progressed I was so worried that I couldn’t get it done properly. I was even thinking I should get more ideas and was chatting with Vaishali
. You might have guessed, everything is so simple for her. So she quickly gave me ideas for three days. And mind you all very simple infact. I decided I would try at least one of it. After reaching home, I took out the cauliflower I had and proceed to do what I had initially planned. Meanwhile had a cup of yellow moong dal soaked as well.
I had planned on making Roasted Cauliflower, capsicum with something with more protein. Since the moong dal was soaked enough, I decided to make patties. Vaishali suggested I use cornstarch a bit for binding. I proceeded to use almond flour and the mix was sort of watery. I simply greased the non stick pan with oil and drop in the moong dal balls on it and completely forgot. I decided it would get itself cooked. Trust me, the moong dal balls turned out so good.
The other dish that I was getting ready, didn’t get fully done. So this roasted cauliflower, capsicum with Moong Dal patties was served with roti for Amma. She loved the meal.
If you want to follow the Low carb diet, simply dig into the vegetable. If you had noticed I used the same bowl, yea you got it right. I wanted to make sure my serving bowl was the same, just to ensure my quantity was right…:) ..Goodness Gracious, I hope you didn’t think I was either being lazy or so harried that I couldn’t get another bowl!
Anyway I talked so much that I almost forgot to write in few salient points one should remember if following a Low Carb Diet. Before I forget or even misplace the data I have gathered over reading so much. Here’s an account.
In a Low Carb Diet, one can take in butter or ghee as it doesn’t have carb in it. However if your goal is to loose weight, I suggest you don’t use either too much. My doctor always used to advise that we all can consume at least 2 tsp of ghee. But then it’s always along with proper exercise. Bones need oil, butter or ghee.
On the other hand Low Carb Diet and Vegetarian Deit is very hard to manage most times. If one is a non vegetarian, one can manage with animal based protein and fats, while being a vegetarian with no Egg, it takes a bit more planning to arrive at a Low Carb Diet.
If you are planning to go on Low Carb Diet, then you will have to increase your fat intake, eat more protein and cut all Carb rich food. However since a low-carb diet is generally considered one that contains less than 130 grams of carbs per day, you can limit your carb intake to those from vegetables and some fruit and dairy products. Fat can come in the form of healthy oils, nuts and seeds, a little butter. Low-fat cottage cheese and yogurt, nuts, tempeh and tofu are all low in carbs and high in protein.

also talks about the risks involved in taking up a low carb diet. Please read up, consult your doctor or dietician before taking up this and risking your health. In whatever case, this diet is advisable for a short duration only, as we all need carb for healthy living.
Roasted Cauliflower, Capsicum with Moong Dal patties
For the Moong Dal Patties
Split Yellow Moong Dal – 1 cup
Coriander leaves – 2 tsp
Salt to taste
Roasted cumin powder – 1/2 tsp
Green chilies, finely chopped – 2 tsp
Dry mango powder a pinch
Almond flour – 2 tsp
Oil for cooking – 1 tsp
How to make the Moong Dal patties
Wash and soak the moong dal for an hour. Change water couple of times, then take the dal in MW bowl and MW for 10 mins with just enough water to cover the dal.
Once the dal is cooked, put it under fan or allow it to cool down naturally if you have time. Add rest of the ingredient and make balls. If you dal has more water as mine had, simply drop them on the greased non stick pan, allow it to get cooked while you prepare the vegetable saute.
Once the bottom gets cooked, you can turn it over and cook on both sides.
since mine was very mushy, some turned to crumbles and that added more flavour to the final dish.
When the moong dal patties is cooked well, switch off and have it ready for the saute.
For the Vegetable saute
Butter – 1 tsp
Cauliflower florets – 1 cup
Capsicum, julienne – 1 cup
Salt to taste
Pepper powder – 1 tsp
Chili flakes – 1 tsp
How to make the Vegetable saute
Wash and clean the cauliflower. Par boil with salt in MW for 5 mins. Drain and keep it aside.
Heat a non stick pan with butter, add the cauliflower, toss well. Now add the capsicum julienne, Add all the seasoning and simmer for 5 mins. If you want you can cover, however the vegetables need to be crispy.
Once you cook for 5 – 7 mins, switch off.
How to assemble:
Transfer the vegetable saute to the serving bowl, sprinkle the fried moong dal crumbs all over, top the rest of the patties on top and serve hot.
Vaishali suggested to use a bit of cornflour, I wanted to avoid and see if almond flour will work out. Guess in the paste form it might have worked better as a binder.
As I had already said, I am not a person who can eat plain vegetable as such. However the butter and red chili flakes adds to the flavour. The moong dal patties give body to the saute.
